Single Origin PANAMA Feryen Pacamara Washed

Farm Description

Located in the Bopuete region of southwestern Panama, Feryen employs as few as 30 people and around 400 at harvest time. Harvesting varieties such as Geisha, Pacamara, Catuai, SL28 and Tipica at altitudes of more than 1,600 metres, the region is blessed with fertile volcanic soil, climatic influences from the Pacific and Atlantic Oceans, high temperatures that concentrate flavours and aromas, and abundant sunshine. Unripe or blemished cherries are picked, washed in clean water, and pulped. They are then fermented in tanks for 18 to 24 hours before being washed once again in mechanical washers that rotate at high speeds to minimise the amount of wastewater that contributes to environmental pollution. These well-washed green coffee beans are then slowly dried on African beds for 8-12 days in a mechanical dryer until a certain moisture content is reached.

The result is a firm body that is not light, and a well-blended combination of mild orange zest and subtle jasmine flavours, with a finish that is not monotonous.

파나마 남서부의 Bopuete 지역에 위치한 Feryen은 적게는 30명, 수확 시기에는 약 400명이 활동하고 있습니다. 1,600m 이상 고도에서 게이샤, 파카마라,  카투아이, SL28, 티피카등 다양한 품종을 수확하고 있으며 이 지역은 비옥한 화산 토양과 더불어 태평양과 대서양의 기후 영향, 맛과 향기를 농축시키는 높은 일교차, 풍부한 일조량을 바탕으로 커피 생산에 있어 천혜의 자연 조건을 지니고 있습니다. 잘 익지 않거나 흠집이 있는 체리를 선별하고, 깨끗한 물에 세척한 후 펄핑을 진행합니다. 이후 18~24시간 동안 탱크에서 발효를 진행하며 환경오염에 원인이 되는 폐수를 최소화하기 위해 빠른 속도로 회전하는 기계식 워셔로 다시 한번 세척과정을 거칩니다. 이렇게 잘 씻겨진 생두는 아프리칸 베드에서 8~12일간 기계식 건조기에 일정한 수분율이 도달 할때까지 천천히 건조됩니다.

가볍지 않은 탄탄한 바디감과 부드러운 오렌지 과즙, 은은한 재스민향의 조합이 잘 뒤섞여 단조롭지 않은 복합적인 여운을 지니고 있습니다.
